Sutffed Artichokes

Summary:
Perfect New Orleans appetizer recipe from my dad! :)

Ingredients:
- 2 artichokes (with the tops and stem sides cut flat, the tips snipped off the leaves)
- 2 cups Progresso breadcrumbs
- 1 cup grated parmesan cheese
- 3 cloves of garlic- minced
- Juice of 1 lemon
- 8 oz. olive oil
- 2 lemons slices

Directions:
- Boil prepared artichokes for 15 minutes
- Drain and cool them to room temperature.
- Mix up all ingredients. Stuff each leaf, starting from the top and working your way down.
-Top with a lemon slice.
-Steam the artichokes for 45-60 minutes until a lower leaf pulls free easily.
