Summary:
This is a real Amish recipe and is ABSOLUTELY amazing! We all deserve a great high-calorie meal every now and then! :)
Serves 4
Ingredients:
3 tbsp & 1/2 tsp flour
2 tbsp & 1/2 tsp yellow cornmeal
1 tsp sea salt
1/2 tsp baking powder
2 cups peeled & shredded potatoes
2 tbsp & 1/2 tsp vegetable oil
1 egg
1 onion, minced
1 tbsp & 1 3/4 tsp vegetable oil
Directions:
-In a large bowl, mix together flour, cornmeal, salt & baking powder.
-Add potatoes, 2 tbsp & 1/2 tsp vegetable oil, egg, & onion & mix evenly.
-Heat rest of oil in a large skillet over medium-high heat.
-Drop a heaping tbsp of the potatoes into the hot oil, flattening slightly.
-Cook until browned on the bottom & then flip & cook on the other side.
-Keep on papertowels in a warm oven while frying the rest.
